Chopped salad with peanuts

  • 1 tomato (finely chopped)
  • 4 tbsp cucumber
  • 1 green chilies (finely chopped)
  • 2 tbsp onion
  • 2 tbsp salted peanuts (roughly chopped)
  • 1 tbsp coconut (desiccated)
  • 1 inch ginger (grated)
  • 1 tsp salt (to taste)
  • 1 tsp oil
  • 1 tsp mustard
  • 5 curry leaves (optional)
  • 1 tbsp lime (juice)
  1. To make the salad, mix together all the ingredients in a bowl

  2. To make the spice mixture, heat the oil in a small pan and add the mustard seeds

  3. Once they begin to splutter, add the curry leaves and remove from the heat

  4. Add the lemon juice and stir

  5. To serve, pour the spice mixture over the salad and stir to coat

  6. Taste and adjust the seasoning if necessary
