Materials

  • 400 g Egg noodle
  • 400 g zucchini
  • 130 g scallions
  • 1 tbsp sesame oil
  • 3 tbsp soy sauce
  • 2 tbsp Fruit Vinegar
  • 3 tbsp Lemon Juice
  • 1 teaspoon sugar
  • 1 tsp salt
  • 1 cayenne pepper
  • 255 g Salmon
  • 2 teaspoons Sesame seeds

Instructions

  • Cook the noodles according to the instructions on the pack
  • Blanch the courgettes and spring onions in salted boiling, salted water for 3 minutes, then drain in a sieve
  • Drain the noodles
  • Mix together the sesame oil, soy sauce, fruit vinegar, lemon juice, sugar, salt and cayenne pepper, to taste
  • Stir in the noodles, vegetables and salmon
  • Serve immediately sprinkled with sesame seeds
