Materials
- 400 g Egg noodle
- 400 g zucchini
- 130 g scallions
- 1 tbsp sesame oil
- 3 tbsp soy sauce
- 2 tbsp Fruit Vinegar
- 3 tbsp Lemon Juice
- 1 teaspoon sugar
- 1 tsp salt
- 1 cayenne pepper
- 255 g Salmon
- 2 teaspoons Sesame seeds
Instructions
- Cook the noodles according to the instructions on the pack
- Blanch the courgettes and spring onions in salted boiling, salted water for 3 minutes, then drain in a sieve
- Drain the noodles
- Mix together the sesame oil, soy sauce, fruit vinegar, lemon juice, sugar, salt and cayenne pepper, to taste
- Stir in the noodles, vegetables and salmon
- Serve immediately sprinkled with sesame seeds
