Sliced Salmon & Noodle Bowl

  • 11 ounces Egg noodle
  • 14 ounces zucchini
  • 4.5 ounces scallions
  • 1 sesame oil
  • 3 soy sauce
  • 2 Fruit Vinegar
  • 3 lemon juice
  • 1 teaspoon sugar
  • salt
  • cayenne pepper
  • 9 ounces Salmon
  • 2 teaspoons Sesame seeds
  1. Cook the noodles according to the instructions on the pack

  2. Blanch the courgettes and spring onions in salted boiling, salted water for 3 minutes, then drain in a sieve

  3. Drain the noodles

  4. Mix together the sesame oil, soy sauce, fruit vinegar, lemon juice, sugar, salt and cayenne pepper, to taste

  5. Stir in the noodles, vegetables and salmon

  6. Serve immediately sprinkled with sesame seeds
