Panko-crusted Chicken

  • 4 breasts
  • 4 all-purpose flour
  • 2 eggs
  • 2 cups panko breadcrumbs
  • 1 cup vegetable oil

  1. Beat the chicken breasts with a rolling pin to flatten

  2. Season the flour with salt and pepper and place in a shallow bowl

  3. Place the beaten eggs in a shallow bowl and the breadcrumbs onto a plate

  4. Heat the oil in a large skillet over a medium heat

  5. Dip the chicken breasts in the flour, shake off any excess then dip into the egg and then the breadcrumbs

  6. Fry the chicken for 3 – 4 minutes on each side or until golden brown

  7. Drain on kitchen paper, cut into slices and serve hot, dipping in the soy sauce
