Battered Banana Dessert

  • 1 cup warm water
  • 1 large egg
  • 2 vegetable oil
  • 1 teaspoon Dry yeast
  • 1 cup all-purpose flour
  • 0.5 cup Coconut
  • 1 Sesame seeds
  • 0.25 teaspoon ground Nutmeg
  • 4 large Banana

  1. Whisk 1 cup warm water, egg, and 2 tablespoons oil in large bowl to blend

  2. Add yeast, then flour, whisking until smooth

  3. Cover and allow to stand at room temperature until batter has almost doubled in volume, approximately 2 hours

  4. Stir in coconut, sesame seeds, and nutmeg

  5. Cut bananas on deep diagonal into eighteen 1/2-inch-thick slices

  6. Add banana slices to batter; stir gently to coat

  7. Pour vegetable oil into heavy large saucepan to depth of 1 1/2 – 2 inches in depth

  8. Attach deep-fry thermometer and heat oil to 350°F

  9. Insert fork into 1 banana slice and transfer to oil

  10. Repeat and cook up to 6 banana slices at a time, not overcrowding fritters

  11. Fry until crisp and golden on all sides, about 3 minutes

  12. Using slotted spoon, remove fritters to a plate lined with paper towels to drain

  13. Repeat with remaining bananas in 2 more batches

  14. Divide fritters among 6 plates

  15. Serve warm with vanilla ice cream
