Green Tea Granita

- 2 teaspoons Green tea
- 7 ounces sugar
- 2 tbsp lime juice
- 1 tbsp mint
Place the tea leaves in a pot and pour 1 quart of water that has boiled and then sat for 5 minutes over the tea
Let steep 2-3 minutes
Pour through a sieve and return the tea leaves to the pot
Discard the first infusion
Pour hot, not boiling water over the tea leaves and steep 3 minutes
Pour through a sieve into a shallow bowl and stir in the sugar, let cool
Juice the limes and add to the tea
Place in the freezer and stir every 30 minutes with a fork to prevent large ice crystals from forming
Freeze about 4 hours, Serve garnished with mint leaves
