Indian scrambled eggs

  • 1 tsp vegetable oil
  • butter
  • 2 tbsp chopped onion
  • 5 small tomato (chopped)
  • green chilli (or pinch of red chilli powder)
  • 2 eggs (beaten)
  • to taste
  • 1 tbsp fresh coriander
  1. Heat the oil and butter in a small non-stick frying pan

  2. Add the onion and fry for about four minutes, until soft

  3. Beat together the rest of the ingredients in a bowl and pour into the pan and scramble as normal

  4. Take them off the heat when they are cooked to your taste

  5. Serve with toast or naan bread
