  1. Stovetop masoor dal Add masoor dal & moong dal (optional) to a pot or pressure cooker

  2. Wash it a few times until the water runs clear

  3. Next add chopped tomatoes, water and green chili

  4. Pressure cook for 1 to 2 whistles on a medium heat

  5. If cooking in a pot, cook on a medium heat until soft adding more water if needed

  6. Once the pressure releases, open the cooker

  7. Mash the dal to suit your liking

  8. You can make it smooth or keep it grainy

  9. If needed you can pour 2 to 3 tbsp water to bring it to a consistency

  10. Tempering Heat 1 tbsp ghee in a small pan

  11. Add mustard, cumin, red chilies and garlic

  12. Saute until the garlic turns slightly golden

  13. Turn off the heat and add hing, chili powder and turmeric

  14. You can also add in garam masala if using

  15. Quickly pour this off to the dal

  16. Time to add salt and kasuri methi if using

  17. Mix and simmer for 2 mins

  18. If using coriander leaves add them now

  19. Squeeze in some lemon before serving

  20. Masoor dal is ready to serve with roti or rice

  21. Instant pot masoor dal Press saute button on the Instant pot and pour oil to the inner pot

  22. Add mustard, cumin, broken red chilies and garlic

  23. When they splutter add tomatoes along with salt, chilli powder, hing, garam masala (optional) and turmeric

  24. Saute for 1 min

  25. Next add dal, green chilli and pour water

  26. Stir well and deglaze to release any bits of food stuck

  27. Secure the Instant pot with lid

  28. Set the steam release handle to sealing

  29. Optional :You can cook basmati rice together by placing the rice bowl on a long legged trivet

  30. Press pressure cook button and set the timer for 7 mins

  31. Wait for the pressure to release naturally

  32. When the pin drops, open the IP

  33. Stir well and add more salt & hot water if needed

  34. Cook on saute mode to bring to consistency if needed

  35. Squeeze lemon juice and serve masoor dal with rice
