Japanese Noodles with Cucumber

  • 12 ounces Soba Noodles
  • soy sauce
  • 4 sesame oil
  • 4 Sesame seeds
  • 1 Cucumber (peeled (thinly sliced))
  • 0.25 cup Rice vinegar
  • 1 brown sugar
  1. Boil the soba noodles in water with 2 tbsp soy sauce

  2. Drain and mix with a little sesame oil

  3. Leave until lukewarm

  4. Roast the sesame seeds in a hot pan until golden brown

  5. Remove from the pan and let cool

  6. Mix the vinegar and sugar with 3-4 tbsp water and the remaining oil and season with soy sauce

  7. Mix in the cucumber and noodles and serve in small bowls
