Chipotle Pork Carnitas

  • 4 pork roast
  • 2 sunflower oil
  • 1 teaspoon salt
  • 1 cup water
  • 1 teaspoon thyme
  • 2 teaspoons juniper berries
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  1. Preheat oven to 300 degrees

  2. Over medium heat add sunflower oil to a dutch oven

  3. Season roast with salt

  4. When the oil is hot saute roast on all sides for about 3 minutes on each side

  5. This will brown the roast a bit

  6. Add water, bay leaves, thyme, juniper berries, and ground black pepper to the Dutch Oven

  7. Place lid on the pan and cook for 3 to 4 hours in the oven

  8. Turn roast over in the pot every hour or so

  9. Turning the roast will ensure the flavors go through the roast

  10. Remove roast from oven

  11. Allow resting for about 20 minutes

  12. Then pull the meat apart with two folks

  13. Slow Cooker Directions Add sunflower oil to a large skillet or Dutch oven over medium heat

  14. Season roast with salt

  16. Place meat into a slow cooker

  17. Add water, bay leaves, thyme, juniper berries, and ground black pepper to the slow cooker

  18. Place lid on the pan and cook for 3 to 4 hours on medium heat

  19. Turn roast over in the slow cooker every hour or so

  20. Turning the roast will ensure the flavors go through the roast
