Sesame Udon Soup

- 2 Candied ginger
- 4 mushrooms
- 6 cups vegetable stock
- 0.5 teaspoon salt
- 4 soy sauce
- 3 tablespoons Mirin
- 2 Rice wine
- 14 ounces Udon Noodle
- 4 scallions
- 3 Sesame seeds
Heat the ginger, mushrooms and half the stock in a pan and bring to a boil
Simmer for 15 minutes
Add the salt, soy sauce, mirin and rice wine and simmer for 1 minute
Bring the remaining stock to a boil in a pan
Add the noodles and cook for about 5 minutes, until tender
Drain thoroughly and divide among 4 serving bowls
Pour over the soy sauce broth and garnish with spring onion and sprinkle with sesame seeds
