Sesame Udon Soup

  • 2 Candied ginger
  • 4 mushrooms
  • 6 cups vegetable stock
  • 0.5 teaspoon salt
  • 4 soy sauce
  • 3 tablespoons Mirin
  • 2 Rice wine
  • 14 ounces Udon Noodle
  • 4 scallions
  • 3 Sesame seeds
  1. Heat the ginger, mushrooms and half the stock in a pan and bring to a boil

  2. Simmer for 15 minutes

  3. Add the salt, soy sauce, mirin and rice wine and simmer for 1 minute

  4. Bring the remaining stock to a boil in a pan

  5. Add the noodles and cook for about 5 minutes, until tender

  6. Drain thoroughly and divide among 4 serving bowls

  7. Pour over the soy sauce broth and garnish with spring onion and sprinkle with sesame seeds
