- 26 ounces sunflower oil
- 1 cup all-purpose flour
- 1 teaspoon Baking powder
- water
- 1 Eggplant
- 1 carrot
- 1 Asparagus
- 1 pepper
- 1 zucchini
- 2 cups Broccoli
Heat the oil in a wok or deep skillet until smoking
Sift the flour and baking powder into a bowl and fold in the egg white
Add enough water to make a thin batter
Cook the vegetables in batches by coating in batter then deep frying in the oil until crisp
Drain on kitchen paper and serve immediately
