Beef and Barley Burgers

  • 50 g pearl barley
  • 500 g beef (minced)
  • 1 large egg
  • 100 g onions (finely chopped)
  • 1 tsp Italian herbs
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (plus extra for greasing)
  1. Rinse the barley under cold running water, drain, and place in a large saucepan

  2. Cover with water and bring to a simmer

  3. Cook the barley for 30 minutes or until tender

  4. Then drain, rinse under running water, and drain well again

  5. Set aside to cool

  6. Place the beef, egg, onions, and Italian herbs in a large bowl

  7. Season with salt and pepper and mix well to combine

  8. Add the cooled barley to the bowl and mix until evenly incorporated

  9. Lightly grease a plate

  10. Form the mixture into 4 burger patties, each roughly 10cm (4in) in diameter and 2cm (3⁄4in) thick

  11. Place them on the greased plate and cover with cling film

  12. Chill the patties for about 20 minutes to help them keep their shape on cooking

  13. Heat the oil in a large frying pan over a medium heat

  14. Fry the burger patties for about 10 minutes on each side, until well browned and cooked through

  15. Remove from the heat

  16. Serve the burgers with a selection of buns and accompaniments
