Green Tea Granita

  • 2 teaspoons Green tea
  • 7 ounces sugar
  • 2 tbsp lime juice
  • 1 tbsp mint
  1. Place the tea leaves in a pot and pour 1 quart of water that has boiled and then sat for 5 minutes over the tea

  2. Let steep 2-3 minutes

  3. Pour through a sieve and return the tea leaves to the pot

  4. Discard the first infusion

  5. Pour hot, not boiling water over the tea leaves and steep 3 minutes

  6. Pour through a sieve into a shallow bowl and stir in the sugar, let cool

  7. Juice the limes and add to the tea

  8. Place in the freezer and stir every 30 minutes with a fork to prevent large ice crystals from forming

  9. Freeze about 4 hours, Serve garnished with mint leaves
