Barbecued skirt steak with gochujang mayo

  • 600 g beef skirt ((2 steaks))
  • 2 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp anchovy sauce ((or fish sauce if you can’t source this))
  • 1 tbsp rice vinegar
  • 1 tbsp runny honey
  • Gochujang mayo
  • 3 tbsp gochujang
  • 3 tbsp mayonnaise
  • To garnish
  • 4 spring onions (white parts cut lengthways and green parts finely sliced)
  • 1 handful coriander
  1. If your steaks are uneven, pound them with a meat hammer or a rolling pin until they are flat

  2. This will also help tenderise the steaks Combine all the ingredients for the marinade and massage it into the steaks

  3. Store in a covered container or in a ziplock bag in the fridge for 2 hours or overnight if you have the time (this will yield the best results) Remove the steaks from the fridge an hour before you plan to cook them
