Materials

  • 2 Candied ginger
  • 4 mushrooms
  • 6 cups Vegetable broth
  • 0.5 teaspoon salt
  • 4 soy sauce
  • 3 Mirin
  • 2 Rice wine
  • 14 ounces Udon Noodle
  • 4 scallions
  • 3 tbsp Sesame seeds

Instructions

  • Heat the ginger, mushrooms and half the stock in a pan and bring to a boil
  • Simmer for 15 minutes
  • Add the salt, soy sauce, mirin and rice wine and simmer for 1 minute
  • Bring the remaining stock to a boil in a pan
  • Add the noodles and cook for about 5 minutes, until tender
  • Drain thoroughly and divide among 4 serving bowls
  • Pour over the soy sauce broth and garnish with spring onion and sprinkle with sesame seeds
