Materials

  • 9 ounces Udon Noodle
  • 3 tbsp oil
  • 2 cups shrimp
  • 2 tbsp soya sauce
  • 2 tbsp sesame oil
  • 1 tbsp lime juice
  • 0.5 teaspoon sugar
  • 2 Arugula
  • 0.5 Cucumber
  • 4 scallions
  • 4 tsp seeds

Instructions

  • Cook the noodles according to the packet instructions, drain well and rinse under cold running water
  • Heat the vegetable oil in a wok or skillet and stir fry the shrimp until they are cooked through
  • Remove from the wok and set aside
  • Mix together the soy sauce, sesame oil, lime juice and sugar to make a dressing
  • Mix the noodles, shrimp, arugula, cucumber and scallions in a large bowl and stir in the dressing
  • Pile the salad onto serving plates and scatter with the sesame seeds
