Materials

  • 700 ml sunflower oil for frying
  • 200 g all-purpose flour
  • 1 teaspoon Baking powder
  • 300 ml water
  • 1 Eggplant
  • 1 carrots
  • 1 Asparagus
  • 1 pepper
  • 1 zucchini
  • 300 g Broccoli

Instructions

  • Heat the oil in a wok or deep skillet until smoking
  • Sift the flour and baking powder into a bowl and fold in the egg white
  • Add enough water to make a thin batter
  • Cook the vegetables in batches by coating in batter then deep frying in the oil until crisp
  • Drain on kitchen paper and serve immediately
