  • 26 ounces sunflower oil
  • 1 cup all-purpose flour
  • 1 teaspoon Baking powder
  • water
  • 1 Eggplant
  • 1 carrot
  • 1 Asparagus
  • 1 pepper
  • 1 zucchini
  • 2 cups Broccoli
  1. Heat the oil in a wok or deep skillet until smoking

  2. Sift the flour and baking powder into a bowl and fold in the egg white

  3. Add enough water to make a thin batter

  4. Cook the vegetables in batches by coating in batter then deep frying in the oil until crisp

  5. Drain on kitchen paper and serve immediately
