  • 2 cups cooked (white Sushi rice)
  • 0.5 cup Rice vinegar
  • 1 vegetable oil
  • 0.25 cup granulated sugar
  • 1 teaspoon salt
  • 6 ounces fresh Tuna
  • 1 Peanut oil
  • 3 teaspoons Wasabi paste
  • 1 Radish
  • 16 herbs
  1. In a small saucepan, combine vinegar, oil, sugar and salt

  2. Cook over medium heat until sugar dissolves

  3. Cool; stir into prepared rice

  4. Continue stirring until the rice is cool enough to handle

  5. Using your hands or a rice mold, form the rice into 16 small oblong balls

  6. Slice the tuna into 16 equal thin strips

  7. Heat the oil in a grill pan

  8. Sear the tuna slices very quickly on one side and remove from pan

  9. Spread wasabi to taste on the uncooked side

  10. Place tuna slices wasabi side down on top of the rice balls

  11. Place the sushi on fresh herb leaves and top with very thinly sliced radish

  12. Serve immediately
